AVOID INCREASED INSURANCE PREMIUMS DUE TO WATER DAMAGE

For the hospitality industry, accidental fire sprinkler floods are one of the largest culprits of costly damages and headaches to hotel and motel owners. Just one activated sprinkler head can cost up to $1,000 for every minute left flowing and the chances of a hotel’s insurance premiums rising due to multiple water damage incidents, increases with each occurrence.

Shutgun is an innovative Fire Sprinkler Shut Off Tool, engineered and tested to shut off activated fire sprinkler heads within seconds, avoiding damage while keeping the remainder of the building fire safe. Shutgun works on all exposed, semi-recessed and even broken or sheared sprinkler heads. They will also be unveiling their new Concealed Head Shutgun, specifically designed for those concealed sprinkler head models found in conference centres, lobbies, ballrooms and theatres.

When a sprinkler head is accidentally activated, quick shut off time is critical. Water is released at pressures as high as 170 psi and up to 25 gallons per minute, which is enough to fill a bathtub in under two minutes.

Guests Are Bringing Up To Five Mobile Devices Into The Guest Room. Are you ready?

KANSAS CITY, MO--(Marketwired - August 21, 2014) - It has been nearly twenty years since a new solvent has been added to the world's care labeling standards. But in June it became official. Silicone is now an official recommendation for the cleaning of textile products according to ASTM D3136, Standard Terminology Relating to Care Labeling for Apparel, Textile, Home Furnishing, and Leather Products.

The ruling comes after GreenEarth Cleaning, a voting member of ASTM Committee D13 on Textiles, proposed amendments to the care labeling standards with the goal of improving professional garment care. This ruling makes GreenEarth silicone the first new dry cleaning solvent specifically referenced for care labeling by ASTM International since fluorocarbon in 1996.

Formerly known as the American Society for Testing and Materials, ASTM International is one of the world's largest development and delivery systems of standards and related products and services. Today, some 12,000 ASTM standards are used around the world to improve product quality, enhance safety, facilitate trade, and build consumer confidence.

ASTM's new definition of dry cleaning is now "in the care of textile products, a cleaning process using solvents such as perchloroethylene, a petroleum, or a silicone." The phasing out of Perc has caused a strong demand for alternative solvents. Silicone is now a recognized alternative on a worldwide basis.

"We believe that the inclusion of the silicone option by ASTM will assist garment manufacturers to address the increasing regulation of perc and hydrocarbons in the dry cleaning industry. GreenEarth's silicone process provides an alternative that is gentler for garments and the planet," said Tim Maxwell, President of GreenEarth Cleaning. 2014 GOLD KEY AWARD FINALISTS ANNOUNCED

 

Winners and finalists in 19 categories to be recognized at the 34th Gold Key Awards Gala, Monday, Nov. 10, at the Mandarin Oriental New York

CINCINNATI, OH, August 18, 2014 – The finalists for the 34th Gold Key Award for Excellence in Hospitality Design, the industry’s most prestigious honor, have been announced by the International Hotel, Motel + Restaurant Show® (IHMRS).

 

A panel of nine prominent judges considered more than 280 entries for these coveted awards, which recognize outstanding design worldwide for hospitality projects that were completed or renovated from March 1, 2013 through March 1, 2014.

 

“The record number of entries and the quality, creativity and functionality of the submissions all reflect the dynamism of this industry,” said Mary Scoviak, executive editor of Boutique Design magazine, which co-sponsors the Gold Key Awards alongside HOTELS magazine. “This year’s finalists redefined what outstanding design is all about.”

 

The 2014 Gold Key judges echoed that sentiment. “Just looking at some of the photos, I thought, ‘This is design at its best. I want to live in one of these projects,’” said judge Dana Kalczak, Four Seasons Hotels and Resorts’ vice president of design. According to John McMullen, Highgate Hotels’ senior vice president of construction, “What these projects proved again and again is that the right design, the right detail makes a project unforgettable.” Judge Ron Kollar, Tishman Hotel Corp.’s chief design officer, added, “This year’s finalists show that designers are writing and rewriting concepts until they say something new, and saying  it with integrity. And, they’re telling their stories in ways that will still be relevant in years to come.”

 

Finalists will be recognized and winners will be revealed in each of this year’s 19 categories at the Gold Key Awards Gala, now a cocktail reception and dinner, from 6:30pm – 10:00pm on Monday, Nov. 10, at the Mandarin Oriental New York. Presented by Boutique Design magazine and HOTELS magazine, the ceremony will culminate with the naming of Designer of the Year.

NEW YORK, NY, July 1, 2014…The Nyman Group of Scottsdale, AZ & Las Vegas, NV and Robert Rippe & Associates of Minnetonka, MN, have been selected as the winners of the International Hotel, Motel + Restaurant Show’s 2014 Foodservice Pioneering Concept. The foodservice consulting groups’ “BOWLS—Food That’s Good For You!” concept will be built to a scaled working model on the exhibit floor during the IHMRS, November 9-11, and will host demonstrations throughout the Show.

            “IHMRS attendees are not only looking for innovative products and equipment, but also for edgy concepts and engaging ideas to wow customers,” said Phil Robinson, IHMRS Show Director.  “In the eyes of the judges, BOWLS best achieved the competition objective of developing a retail foodservice concept that can succeed in an under-used, non-traditional location not specifically outfitted to foodservice.”

BOWLS is a 500-square-foot, quick service style, healthy and natural foods concept offering hormone- and nitrate-free ingredients with no additives. Included are bowl bases such as gluten-free noodles, brown rice, quinoa or warm lavosh to which are added proteins, seasonal vegetables and other ingredients to order.

According to Robert J. Nyman, President, The Nyman Group Ltd., “BOWLS is a personalized experience, allowing guests to create their meal based upon flavors, emotions, personal preferences, allergies and time of day. The service line is non-linear, and chefs guide the guests through the various ingredients, offering tastes and explanations about where food is from and its nutritional value, while preparing each personalized BOWL.”

The competition judges also complimented BOWLS’ commitment to technology — a 100% wireless, Wi-Fi based operation — and to sustainability. The concept includes plant-based disposable serviceware, flatware and beverage cups. If designed for actual operation, the concept also would include a full recycling program encompassing waste water, trash and food waste for composting. BOWLS has a living wall of fresh herbs, hydroponically grown with recycled water, which chefs access as they prepare food. Freestanding locations would use a bank of solar panels on the roof, designed to capture energy and further minimize BOWLS’ environmental impact.

BOWLS elicited many comments from judges, including:

“The concept addresses the need for a healthy, affordable and convenient dining experience with a unique approach. Concept is very interactive with personal attention to customer needs. It addresses a wide array of sustainability issues and incorporates a number of technologies.”

 

“Good menu selection, environmentally sound, and socially responsible. A strong 21st century concept.”

 

 “BOWLS is very cutting-edge in terms of concept and menu. Designers made thoughtful use of materials and were spot-on for allergen-free selections on the menu.”

Graphic illustrations for both projects also will be on display at IHMRS 2014.

IHMRS EXPERIENCES BOUNCE BACK WITH 2013 SHOW

- A refreshed exhibit floor and new initiatives stimulate growth -

NEW YORK, NY, December 11, 2013… North America’s largest annual hospitality industry gathering – the 98th annual International Hotel, Motel + Restaurant Show® (IHMRS) took place November 9-12 at New York City’s Jacob K. Javits Convention Center. IHMRS presented 550 hospitality industry suppliers to 15,996 trade attendees over four days of exhibits and conferences.

The visitor results marked a significant increase from the 13,048 attendees at last year’s IHMRS, held in the weeks following Hurricane Sandy.  “We’ve had everything from hotel owners to senior corporate representatives from all the major brands, so I can’t be more thrilled with the actual attendance and the types of people that we’ve been able to meet,” said Jonathan Benjamin, President, Xeros, Inc.

IHMRS 2013 debuted several new initiatives which included a re-merchandised show floor with five easy-to-navigate categories: Operations, Technology, Food & Beverage, Tabletop, and Green. The Hospitality Green pavilion, presented in partnership with Green Lodging News, featured its own on-floor education theater and a charity initiative with Clean the World’s ONE Project, where attendees assembled 3,500 hygiene kits over three days at IHMRS to be donated to local charities.

The Tabletop pavilion, in partnership with TabletopJournal.com, serviced a fast growing demand among operators for design-driven tabletop products, and included the first annual “Tabletop Challenge” which was voted on by show attendees. The winning design this year went to Gustavo Gutierrez and Tina Delia of Delia Designs, a Philadelphia based design firm.

The Food & Beverage pavilion featured dedicated spaces for six upward trends in foodservice, with products, demonstrations, and seminars related to each of these trends – gluten free, yogurt, grab-n-go, baking, locally sourced, and mix &mock. Notable speakers and demonstrators included famed mixologist Warren Bobrow, Chef Kevon William Langley and the Black Culinary Alliance, and Chef Robert Ellinger and his instructors from the Dessert and Pastry Guild.

IHMRS also celebrated the best in hospitality design with two annual industry awards events on Sunday, November 10th: the 33rd Annual Gold Key Awards, which recognize outstanding hospitality design worldwide for properties completed or renovated within the past 18 months (click here for winners), and the Editors’ Choice Awards which recognize best new products within the categories of design, equipment & supplies, food & beverage, green, operations, tabletop and technology (click here for winners). November 15, 2013, Los Angeles, CA—The Hilton Los Angeles/Universal City is utilizing Los Angeles County PACE financing to fund an astounding $7 million worth of sustainable upgrades, making it the largest commercial PACE (Property Assessed Clean Energy) project to date in the U.S. Showing a commitment to sustainable living, the Hilton Los Angeles/Universal City’s extensive energy efficiency project will lead to an annual energy savings of $800,000 and water savings of $28,000, conserving more than 2.8 million gallons of water.

Team Gexpro won the RFP for this iconic project and worked together with sustainability firm RenewAll to assemble an all-star team of contractor and service partners to initiate the green building upgrades. Gexpro and RenewAll worked with Hilton LA Universal City to develop an integrated energy savings plan that led to increases in projected energy savings and decreases in overall costs. Total scope of comprehensive energy solutions includes lighting, motors, controls, HVAC, window film, plumbing and EV Charging Stations.

The system uses up to 70% less water, 50% less energy, and approximately 50% less detergent as compared to conventional washing to deliver superior cleaning results.

 

Tabletop – Front of the House (Miami, FL) for Harmony Bento™, a totally unique porcelain interpretation of the classic bento box. It offers a multitude of modern compartmentalized serving options in six different configurations and twenty two mix-and-match accompanying pieces

 

Technology – anyGuest.com for anyGuest.com, a mobile and online ordering application built to serve dine-in, room service, delivery, and takeout. It is a custom branded web-application for guests to use their own smart device and order off an establishment's menu wherever they are.

 

Editors from leading hospitality trade publications reviewed nearly 100 submissions of the latest products for the industry, and selected winners based on innovative product design, how a product answers a particular industry need, creative use of material or construction, and development or use of a new technology.

THE RIGHT LAUNDRY EQUIPMENT GIVES HOTEL GUESTS THE FEEL OF LUXURY

The ultimate reason for the stay – a good night’s sleep – should be enhanced by bedding that is soft, comfortable, and appealing. A Place in History

Positioned on the St. Petersburg, Fla., waterfront, the Vinoy Renaissance has a storied past, having gone through more than one renaissance of its own. Opening at the peak of the Florida boom in the Roaring ‘20s, the Vinoy is an intricately decorated 375-room hotel.

During its early years, the Vinoy was a stopover for celebrities, the wealthy and U.S. presidents, but its popularity began to stagger following World War II. Leading into the 1960s, changing tastes and a lack of maintenance continued the Vinoy’s steady decline; however, the residents of St. Petersburg did not give up on the hotel, and a 1984 referendum saved it from demolition.

A $93 million renovation project restored the Vinoy to its former glory, and by 1992 it once again was welcoming guests and taking its place as the epicenter of St. Petersburg’s downtown waterfront. Its current owner, the Renaissance Hotels and Resorts by Marriott, is committed to ensuring the Vinoy is one of its premier properties by offering top-notch amenities and hospitality.

Recent Times

Since the Vinoy’s renovation, the hotel industry has focused on making sleep the most memorable part of a guest’s stay. The purchases of high-end mattresses and pillows have put an increased importance on the quality of linens provided to guests and the upkeep that’s associated. 

Throughout two shifts the Vinoy laundry room staff ensures that linens maintain quality standards.  On the first shift, three team members load the washer-extractors and tumble dryers, while two or more iron and fold the linens. A three person team then feeds the units during the night shift.

A diligent staff is only part of a laundry operation’s success, however. Updated equipment is also a key factor.

In 2011 management became aware that the equipment, which dated back to the 1990s, could not keep up, according to Joe Lopresti, the Vinoy’s director of engineering.

“Our two 750-pound and one 300-pound capacity washer-extractors reached the end of their useful life,” Lopresti said. “The machines had become expensive to run and maintain, and were excessively increasing our utility costs.”

Better Equipping the Staff

The old equipment also impacted the laundry staff’s efficiency, Lopresti said. The crew had to wait for the washers to finish a cycle and then had to distribute those loads into their four 150-pound tumble dryers. The limited dryer capacity made it necessary for the large washers to be run under capacity.

When the Vinoy staff began to think about upgrading their laundry capabilities, they turned to equipment consultant Jason Downey of Southeastern Laundry Equipment to help identify the best approach. Following an extensive evaluation of the Vinoy laundry facility, Downey and Southeastern developed a plan recommending the right size low-maintenance UniMac equipment to best fit the department’s needs.

“Every laundry is different; in Vinoy’s case, the staff does more pounds of laundry than most hotels their size, and handle many high-end types of linen,” Downey noted.

To reliably serve the Vinoy’s needs, Downey recommended installing washer-extractors with a smaller capacity than the old machines while improving throughput by increasing the overall number of washers to six. The resort accepted the recommendation and Southeastern installed five 150-pound high capacity UW washer-extractors and one 60-pound mid-performance UW washer-extractor*, as well as four 170-pound ultrafast UT tumble dryers.  

With this equipment mix, staff no longer had to worry about a single machine breaking down and impacting the laundry room productivity for the entire day.  

“If service is needed on our laundry units, they are easier to repair due to the way UniMac equipment is packaged,” Lopresti added.  “Plus, quality replacement parts are readily available for order through Alliance Laundry Systems’ Genuine Parts program (UniMac’s parent company). As Genuine Parts are identical to those used at the time of production, our machines will continue to perform at the highest levels.”

Controls Advance the Operation

By selecting the new UniMac equipment, Vinoy operators have been able to take total control of the laundry facility with the UniLinc™ control system. The system, which monitors and manages machine performance and maintenance data, enables staff to select advanced programming of the wash cycles for fabric type and soil level, plus pinpoint drying times for the tumble dryers.

“These advanced features enable the laundry manager to focus on the very busy work flow instead of worrying about equipment performance and maintenance,” pointed out Lopresti.

In addition, while the crew is washing and drying the Vinoy’s considerable stream of laundry, Lopresti can monitor the operation’s performance from his office or anywhere he has Wi-Fi access, thanks to UniLinc’s wireless networking capabilities.

Should a problem develop, he can determine when and where it started and look for performance trends. The control system also tells him whether the problem is with the equipment, or if it is due to how it is being operated. In both instances, data provided by the UniLinc system enables Lopresti to develop maintenance programs geared towards laundry room operations.

“The fact that I can dial into the router wherever I want and see how the laundry units are performing has been a huge benefit to our operation,” Lopresti added.

With UniLinc, the engineers can also receive error reports and other performance information. As valuable as this data is, its usefulness goes beyond equipment maintenance. If quality issues arise, maintenance can pull reports for analysis by their chemical representatives. Meanwhile, the executive housekeeper can obtain production reports that enable management to gear throughput based on anticipated events such as conferences or holidays.

“For my department, this arrangement means my engineers don’t need to spend a lot of time in the laundry, but can still monitor the equipment,” Lopresti said. “The laundry room is a crucial part of the Vinoy image. We can keep it running and free up our people for other maintenance rather than spending time putting out fires.”

The ability to network the control system wirelessly also proved to be valuable when it came to the installation process. In a historic building such as Vinoy, tearing up walls to install wiring could greatly compromise the architecture and cause structural damage in the process. Without having to hard wire behind the machines, they did not have to deal with an elaborate system setup. It took just a few hours to seamlessly install the wireless adaptors to the machines.

An Impactful Performance

Tumble dryers require large amounts of energy and can represent 70 percent of utility consumption in the laundry room. The OPTidryTM Over-dry Prevention Technology offered with UniMac tumble dryers automatically stops machines once the load reaches the ideal level of dryness. Since installation, Lopresti estimated the OPTidry has saved the operation $30,000 in gas costs alone.

In addition to conserving energy on drying times, OPTidry preserves both the softness and life of linens. Studies have shown linens that have been treated in tumble dryers with this technology experience 31 percent less fiber loss.

The UniMac washer-extractors also help improve the Vinoy laundry facility’s bottom line. The high-performance washer-extractors provide an advanced water management system that includes 30 programmable water levels. This allows laundry staff to precisely match wash cycle to linen type, which can help save thousands of gallons of water each year. In addition, the 150-pound washer-extractor’s 300 G-Force extraction speed results in shorter drying times, further increasing throughput.  

Though hotels such as the Vinoy may be best known for their classic design, changing times require these properties to exceed guests’ expectations in all facets of their operation. Vinoy’s use of UniMac laundry equipment proves it is possible to not only exceed these expectations, but do so at the lowest cost of ownership.

*The UniMac UW60 mid-performance washer-extractor is now available as the UW65 mid-performance washer-extractor. The UW65 enhances the UW60 model by integrating a slightly higher capacity with 200 G-Force to help further reduce drying time and increase throughput.

Kitchen Chic | Women Chefs Shed Their Whites

Monday night, food luminaries flooded into New York City for the James Beard Awards — the culinary equivalent of the Grammys. This year, the awards honored Women In Food, inviting over 20 distinguished female chefs from around the country to cook for the festivities. (Apparently a woman’s place was not at the podium last night: only 2 of the 18 female chef/restaurant nominees won awards.)

While their colleagues looked sharp in an array of formal attire, the women at the food stations were dressed in bright orange or black jackets made by Chefwear. The orange wasn’t so flattering, but at least they weren’t the standard-issue baggy whites many of them wear in their restaurants.

Lately, female chefs who want to look stylish at the stove have been taking matters into their own hands. Browse through a restaurant uniform catalog and you’ll see why: the selections are limited, the styles are masculine and those that are made for women have accentuated waists and hips in too much pink and purple. Eventually, those chili-pepper pants start to look good.

At a recent benefit, Gabrielle Hamilton, the chef of Prune in Manhattan — who cooks only in a blue coatdress that she likens to an Italian medical assistant lab jacket — remarked that her female colleagues were trying to stand out by dressing differently. “You could see all the women’s anxieties about how to dress,” she said, noticing their loud colors or shiny clogs or street clothes.

Who’s to say if that’s a sign of insecurity or creativity? Each chef I spoke to had her own fashion philosophy. Jody Williams, the chef of Gottino in Manhattan, said she is the anti-chef-jacket chef. The beauty of being the chef, she said, is that “you get to wear what you want.” For her, that means no jacket, just a flattering apron. Alex Guarnaschelli, the chef of Butter in Manhattan, wears what her cooks wear in order to feel like part of the team. Melissa Kelly, the chef of Primo restaurants in Tucson, Orlando and Rockland, Me., dresses in overalls by Chefware: “When I’m cooking, I don’t want sleeves that drag,” she said.

When women have to wear whites, most turn to Bragard. Its high-quality fabrics are lightweight and durable. Others wear Crooked Brook, which makes a popular wrap-around jacket, or Chefware, which has made strides in women’s chef jackets.

Michelle Bernstein, the chef of Michy’s and Sra. Martinez in Miami, collects buttons and distinctive fabrics and sends them to Crooked Brook, which customizes her jackets. Elizabeth Falkner, the chef of Citizen Cake and Orson in San Francisco, likes her gray Cayson jacket, which is tailored to her body.

“When I buy a suit, I get it tailored. If you’re a woman, have your coat tailored,” said Ming Tsai, the chef of Blue Ginger in Wellesley, Mass., who wore a handsomely tailored tuxedo at the Beard Awards.

Some female chefs have found their perfect fit in designs by Shannon Reed. Suzanne Goin, the chef of Lucques in Los Angeles, and Ana Sortun, the chef of Oleana in Cambridge, Mass., heard about the Boston-based designer through the Boston chef Barbara Lynch, who wore Reed’s stunning, Marni-inspired jacket in a recent issue of Saveur.

Reed, a graduate of the Fashion Institute of Technology who’s been designing for 18 years, heard so many chef friends complain about their jacket choices that she started her own business two years ago to sell stylish yet functional jackets for women as well as men (Susur Lee is a client). Her women’s styles, which feature a narrower shoulder and more slender silhouette, include the Trench Chef Jacket, with a collar that falls away from the neck, the motorcycle-jacket-inspired Moto jacket, the Cargo jacket and the Aero Jacket. Reed is inspired by vintage and industrial styles and loves using big snaps and buttons. (One client, though, complained that the stain-resistant, Swiss-made fabric is too stiff and heavy.)

The real draw? Reed’s streamlined fit can make a woman look up to 30 pounds thinner, explained the designer. “These poor women!” she said. “They are beautiful and creative people and have to wear ugly, dumpy jackets.”

Perhaps next year’s Beard Awards should feature Best-Dressed Chef.
